HEART-HEALTHY RECIPE

Last Minute Pasta Casserole

This recipe is reproduced from: The Light Hearted Cookbook by Anne Lindsay.

Makes 4 servings

4 oz 125g Macaroni (I cup/250ml)
2 cups 500ml All-Purpose Quick Spaghetti Sauce
1   Small, sweet green or yellow pepper, chopped
2   Large mushrooms, sliced
1 cup 250ml Kernel corn or green peas
2 tbsp 25ml Grated Parmesan Cheese

In a large pot of boiling water, cook macaroni until tender but firm, drain.

Meanwhile, in flameproof casserole or heavy saucepan over heat, combine Spaghetti Sauce, sweet pepper, mushrooms, corn or peas; simmer for 5 minutes. Stir in hot cooked pasta, sprinkle each serving with Parmesan cheese.
