  • 2 apples, cored, and cubed
  • 1 ripe mango, peeled and cubed
  • 250 mL (1 cup) blueberries or blackberries
  • 250 mL (1 cup) strawberries, quartered
  • 15 mL (1 tbsp) lime juice (about 1 lime)
  • 15 mL (1 tbsp) liquid honey
  • 6 fresh mint leaves, finely chopped
  • 15 mL (1 tbsp) unsweetened coconut, medium desiccated


  1. Place fruit in a large bowl. Set aside.
  2. Mix lime juice and honey together in a small microwaveable bowl. Microwave on high for 15 to 20 seconds to soften honey. Pour over fruit, add the mint, and toss gently. Set aside.
  3. In a dry skillet, toss coconut over medium heat until lightly toasted, 5 to 7 minutes. Sprinkle coconut over fruit salad right before serving.
