Bon Appétit: Asparagus Cheese QuichePrint

Makes 6 servings


1½ lbs. Fresh asparagus, cut into 2 inch pieces
1 loaf (1 lb.) Sliced bread, crusts removed
¾ cup Shredded reduced fat cheddar cheese (divided)
2 cups Cubed fully cooked lean ham
6 eggs or 1½ cups egg substitute
3 cups Milk
2 tsps. Dried minced onion
½ tsp. Salt
¼ tsp. Dry mustard


  1. Preheat oven to 325º.
  2. Cook asparagus until just tender but still firm. Drain and set aside.
  3. Place half of bread in single layer in greased 13 x 9 inch baking dish.
  4. Sprinkle with ½ cup cheese. Layer with asparagus and ham.
  5. Cover with remaining bread.
  6. In bowl, lightly beat eggs; add milk, onion, salt and mustard.
  7. Pour over bread.
  8. Bake uncovered, for 50 minutes.
  9. Top with remaining cheese.
  10. Return to oven for 10 minutes or until cheese is melted and knife inserted into center comes out clean.
